Teriyaki Chicken the Crock Pot way!

One of my good friends and I have taken on the challenge of cooking one crock pot meal per week.

After watching the movie 'Julie & Julia,' a true story that is based on the life of legendary cook and culinary teacher, Julia Child, I was so inspired to begin writing about recipes.  It delves into how she came to be such a magnificent cook.  As well as 'Julie,' a woman who was so inspired by Julia Child's recipes and personality, that she took on the persona of Julia Child in her everyday life experiences, especially in the kitchen.  I, myself have either created, modified, or just plain followed the ingredients according to the original owner for all the recipes that I will be posting to my blog from here on out.  Please feel free to use whichever recipes you choose and whatever you do...........HAPPY COOKING :)

This Chicken Teriyaki recipe comes from the Crock-Pot Slow Cooker Bible.

Ingredients:

1lb. boneless, skinless chicken tenders
1can (6oz.) pineapple juice
1/4c soy sauce (I sub. worcestershire sauce)
1tbsp. sugar
1tbsp. minced fresh ginger
1tbsp. minced garlic
1tbsp. vegetable oil
1tbsp. molasses (I didn't have molasses in my pantry, so I sub. maple syrup)
24 cherry tomatoes (optional)
2c hot cooked rice

Directions:
Combine all ingredients, except rice in CROCK-POT.  Cover.  Cook on LOW for 2 hours or until chicken is tender.  Serve chicken and sauce over rice.  Enjoy!

Makes 4 servings.
